The Pompeii
The Pompeii Oven Design is site-built with Brick by hand and, as its name implies, more in line with the traditional Italian Design. That is, it is round much like an Igloo. This Oven is designed for quick fire up time and is capable of cooking everything that the Bread Builder oven does, including Bread. Only it won't produce as many loaves as the Bread Builder oven.

Pompeii Dome
The Pompeii favors less Masonry Mass in the Oven Walls, which allows for quicker fire up time. Great three minute Pizzas cooked on the Brick Hearth, Outstanding Steaks and Fish are what you will expect from this design.
The Pompeii Design as I build it owes its existence to James Bairey, Owner of www.fornobravo.com, and Jim Hatch who actually built the first Pompeii in the U.S. through collaboraton with James. The Pompeii plans are owned by Forno Bravo who will be trademarking the term “Pompeii Oven”.

James researched the original Ovens unearthed in Pompeii, Italy, some still in usable condition, and came up with the idea of developing plans to build them for the Do-it-yourselfer. James believed that this would be a great way for anyone with some construction skills to have an oven. Thank you James Bairey and Jim Hatch.
